This time of year vegetables are abundant, so it’ nice to take advantage of the many choices. Tomatoes, especially are plentiful and they always taste way better when they are fresh. Anyway—I love fresh home made salsa, so in this blog I thought I would share my recipe. It is easy to make and a great way to experience a variety of seasonal vegetables. Give it a try if you have some tomatoes from a farmers market or your garden you are looking to use.

Ingredients:

5-6 large ripe tomatoes
1 large red onion, chopped
2-3 cayenne peppers, chopped (optional)
1-2 cloves fresh garlic, minced
1/2 fresh lime, juiced
Handful fresh cilantro, cut into small pieces
salt
pepper

Directions:

Wash 5-6 large tomatoes. Using a large knife, chop the tomatoes into small chunks and place in a large bowl.

Chop the onion into small, diced chunks and add on top of the tomatoes. Chop the cayenne peppers into small, diced pieces and add on top of the tomatoes and onion. Using a garlic press, squeeze the garlic in the bowl. Add the chopped cilantro and lime juice. Next, add the salt & pepper and any other seasonings you may like and stir the vegetables together until well mixed.

Serve with chips, crackers or entree.
