In this blog, I wanted to share a recipe for some Sweet Potatoes With Red Peppers and Snap Peas. This recipe is easy to make and includes some health ingredients including sweet potatoes and garlic. Sweet potatoes are an extremely nutritious vegetable and are loaded with a variety of nutrients that are good for your body. Some nutrients found in sweet potatoes include vitamin C, vitamin B6, potassium and copper, which are important for blood production. Sweet potatoes are also high in fiber, which help provide a healthy microbiome and are good for gut health.  Garlic is anti-inflammatory and helps promote a healthy immune system. Ingredients

2 cup sweet potatoes, cubed
1 cup snap peas
1 cup red peppers
1/4 tsp sea salt
1/4 tsp garlic powder
1/4 tsp black pepper
1 tsp fresh squeezed lime juice
1 tsp cilantro
1 Tbsp coconut amino’s

Directions

Coat bottom of cast iron pan with avocado oil. Add the sweet potatoes and cook on low heat, stirring occasionally. Add the red peppers and snap peas and cook until slightly crisp. Add the sea salt, garlic powder and black pepper and stir in the mix. Add the lime juice and coconut amino’s and stir. Top with cilantro and serve.
