In this blog, I wanted to share a recipe for some Spinach, Black Olive Over Easy Eggs I came up with for another way to add more protein and healthy fat in my diet. Most of the time I make scrambled eggs, as they are quick and it’s easy to stir in a few vegetables and healthy spices. I thought it would be a good idea however, to try something a little different for a change. This recipe takes a little bit longer to prepare, but the flavor combination of black olives, eggs and spinach topped with a little crusted Parmesan turned out to be a good mix.

This recipe also has some healthy ingredients that combined together make for good breakfast and way to get your day going. Black olives are loaded with MUFAS, good fat, that help give you energy and also help lubricate your joints and muscles. Spinach is high in iron, which boosts your red blood cells and helps prevent fatigue. The eggs are a good source of protein, which helps keep your muscles strong and pain free.

Ingredients

1 Tbsp ghee or butter
2 eggs (I like to buy free range eggs)
1 handful sliced black olives
1 handful fresh spinach
2 tsp Parmesan cheese
Salt & pepper to taste

Directions

In a small frying pan, melt the ghee or butter over low heat. Crack the eggs in the pan and using a spatula, move them so the eggs are joined. Cook over low heat for approximately 5-6 minutes, or until the sides are crisp. Add the olives and spinach on top of the eggs. Salt and pepper to taste and then sprinkle with Parmesan cheese and cook for another minute until the cheese is slightly crisp. Serve warm with a slice of avocado, or pair with an orange.
