In this blog, I wanted to share a recipe I made over the weekend for some Chocolate Pomegranate Bark. I recently posted about the health benefits of pomegranates, so I thought it would be a good idea to share a recipe with them. This recipe is not only easy to make, but it includes some healthful ingredients and only has five ingredients. It’s also festive and pretty tasty too. I love the chocolate and pomegranate mix and this recipe is now one of my favorites! 

Chocolate Pomegranate Bark

  • 2/3 Cup cacao powder 
  • 1/2 Cup maple syrup (I used the Simple Balanced organic variety from Target. You can also use 1/4 to 1/2 tsp. stevia. I would do this to taste and start with small amount. )
  • 1/3 Cup coconut oil, melted
  • 1-2 pomegranates, de-seeded
  • 1 tsp sea salt
  • optional 3/4 cup organic coconut flakes (I tried a batch with this, as well and I really liked it.)

Directions

  1. Add the first 3 ingredients to a mixing bowl and mix until you have a uniform consistency. Add the pomegranate seeds and stir. If you desire, add in the optional coconut flakes, as well.
  2. Pour the mixture in a 8″ x 8″ glass pan lined with parchment paper.
  3. Sprinkle the top of the mix with sea salt.
  4. Place the pan in the freezer for 20 minutes, or so.
  5. Cut or break chocolate bark apart.
  6. Store pieces in an air-tight container in the freezer.
