In this blog I wanted to share a recipe for some Roasted Brussel Sprouts With Butternut Squash, Cranberries And Pecans that I came across. This year for Thanksgiving, I wanted to try something different for a vegetable dish. Typically we have a fresh salad along with our feast, but I’ve found over the years that many people skip the salad and go right for the comfort food. I know turkey, stuffing and mashed potatoes is not something most people eat every day, so I understand people want to indulge. It is important however, to eat fruit and vegetable every day, including Thanksgiving, so this year we’re trying a new festive recipe. This roasted brussels sprouts recipe is delicious, nutritious and colorful! Hopefully it will be a hit with the family too. Ingredients
- 3 cups fresh brussels sprouts, halved
- 3 tablespoons olive oil
- 1/4 teaspoon salt
- 1-1/2 lb butternut squash, cubed
- 2 tablespoons olive oil
- 3 tablespoons maple syrup
- 1/2 teaspoon ground cinnamon
- 2 cups pecan halves, toasted
- 1 cup dried cranberries
- 2-4 tablespoons maple syrup (Add to taste)
- 4-6 strips cooked bacon, cut in small pieces (optional)
Directions
Preheat oven at 400 degrees.
In a medium size bowl, add the brussels sprouts, 3 tablespoons olive oil and salt and toss together. Place the mixture on a baking sheet and roast for about 20 minutes. Set aside.
In a separate bowl, add the cubed butternut squash, 2 tablespoons olive oil, maple syrup, and cinnamon and toss. Place the mixture on a separate baking sheet and roast for about 20 minutes. Set aside.
To toast the pecans, turn the oven down to 350 degrees.
Line a baking sheet with parchment paper and distribute the pecans evenly. Toast the pecans for 5 minutes, or so. (They should appear a little darker in color. )
In a large bowl, combine roasted brussels sprouts, roasted butternut squash, cranberries, pecans and bacon pieces. Add the maple syrup to taste and toss.
