In this blog, I wanted to share a recipe for some Easy Grilled Satay Chicken With Peanut Sauce that I made the other night. This recipe is easy to make and includes some healthful spices. It also includes a delicious peanut sauce you can use for dipping your chicken skewers or side of vegetables, rice or some other grain you choose. Go ahead and give it a try if you are looking for something both tasty and simple to make.

Easy Grilled Satay Chicken With Peanut Sauce

Ingredients:

  • 2 pounds chicken breasts sliced into 1/2-1″ strips*
  • 2 tablespoons olive oil
  • 1/4 cup smooth peanut butter
  • 20-30 wooden skewers

Marinade/Sauce

  • 1/4 cup low sodium soy sauce
  • 1/4 cup packed brown sugar or Coconut Palm sugar
  • 1 tablespoon chili paste
  • 1-1/2 tablespoons lime juice
  • 1-1/2 tablespoons Hosein sauce
  • 1 teaspoon dried basil
  • 1 teaspoon cumin powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon turmeric powder

Directions:

In a medium bowl, whisk together the Marinade Sauce ingredients. Measure a 1/4 cup of the mix and and pour in a to a freezer size bag along with 2 tablespoons olive oil. Add the chicken and toss to evenly coat. Store the chicken and marinade mix in the refrigerator 6 hours or overnight. Refrigerate the remaining marinade/sauce separately, as this will become the base of your Peanut Sauce.

When ready to cook, soak wooden skewers in water for at least 30 minutes. Meanwhile, remove chicken from refrigerator to bring to room temperature. Thread chicken onto skewers and lightly dab excess marinade off with paper towels.

Grease an indoor or outdoor grill and heat to medium heat. Once the grill is hot, place the skewers of chicken on grill and leave on for approximately 4 minutes per side, or until chicken is cooked through.

Add reserved marinade sauce to a small saucepan and bring it to a boil. Simmer for 1 minute. Remove from heat then stir in 1/4 cup peanut butter until completely combined. If the sauce is too thick, you can stir in water 1 tablespoon at a time, until it is the desired consistency you like. Taste and add additional chili sauce, or peanut butter, if desired.

Serve chicken warm with Peanut Sauce for an appetizer or serve with rice and veggies for a main course.
