In this blog, I wanted to share a recipe I made over the weekend for some Chocolate Pomegranate Bark. I recently posted about the health benefits of pomegranates, so I thought it would be a good idea to share a recipe with them. This recipe is not only easy to make, but it includes some healthful ingredients and only has five ingredients. It’s also festive and pretty tasty too. I love the chocolate and pomegranate mix and this recipe is now one of my favorites!Â
Chocolate Pomegranate Bark
- 2/3 Cup cacao powderÂ
- 1/2 Cup maple syrup (I used the Simple Balanced organic variety from Target. You can also use 1/4 to 1/2 tsp. stevia. I would do this to taste and start with small amount. )
- 1/3 Cup coconut oil, melted
- 1-2 pomegranates, de-seeded
- 1 tsp sea salt
- optional 3/4 cup organic coconut flakes (I tried a batch with this, as well and I really liked it.)
Directions
- Add the first 3 ingredients to a mixing bowl and mix until you have a uniform consistency. Add the pomegranate seeds and stir. If you desire, add in the optional coconut flakes, as well.
- Pour the mixture in a 8″ x 8″ glass pan lined with parchment paper.
- Sprinkle the top of the mix with sea salt.
- Place the pan in the freezer for 20 minutes, or so.
- Cut or break chocolate bark apart.
- Store pieces in an air-tight container in the freezer.
