In this blog, I wanted to share a recipe for a Kiwi Coconut Tart I recently made. This light dessert is easy to make and includes some healthy ingredients including coconut oil and coconut flakes. It also includes kiwis and pomegranate, which are in season and plentiful this time of year. The combination makes a festive treat for the holiday season. Give it a try if you are looking for something refreshing and healthy to serve or bring to a Christmas celebration.

Ingredients

  • Crust
  • 2 cups shredded coconut
  • 3/4 cup coconut oil
  • 1/4 cup coconut flour
  • 3 tbsp maple syrup
  • Lime zest from 1 lime
  • Pinch of sea salt
  • Filling
  • 1 to 1-1/2 cups Coconut yogurt (You can also use a dairy variety yogurt.)
  • 1 tsp vanilla paste or vanilla
  • Fruit
  • Kiwis
  • Pomegranate

Directions

Preheat oven to 350 degrees.

In a medium bowl combine the shredded coconut, coconut flour, coconut oil, maple syrup, lime zest, and salt. Press the mixture in a round tart pan. Bake for approximately 8 to 10 minutes, or until slightly browned. Remove the tart from the oven and let cool.

In a small bowl, combine the yogurt and vanilla paste. Fill the tart with the yogurt mix and refrigerate for at least 1 hour before decorating with fruit toppings and serve. Feel free to add additional pomegranate to individual slices.

Note: Feel free to add any other fruit you like such as raspberries, strawberries, etc.
