In this blog, I wanted to share a recipe for some Easy Chicken Penne With Broccoli and Mushrooms I made the other day. This recipe is easy to make and includes some healthy ingredients, including broccoli and mushrooms, which are both high in anti-oxidants and nutrients. I also used some penne pasta that was made from chick peas, for a boost of protein and iron.  All of these items are potent superfoods and are part of the GOMBS diet, which is beneficial for most people.

What is the GOMBS Diet?

The GOMBS diet involves eating nutrient-dense foods including: greens, onions, mushrooms, beans and berries and seeds. The acronym was coined by Dr.  Joel Fuhrman MD, board certified family physician and New York Times best-selling author, to help individuals remember the basis of a healthy diet.

G-Greens
O-Onions
M-Mushrooms
B-Beans and Berries
S-Seeds

“These super foods are the most powerful disease fighting foods on the planet and have showed dramatic protection against cancer, heart disease and diabetes. They also help lower cholesterol and aid in weight loss.”¹ If you haven’t been including enough GOMBS in your diet, you may want to start to give your body a boost of immunity.

Give this Easy Chicken Penne With Broccoli and Mushrooms recipe a try if you like, for a healthy dose of GOMBS.

Chicken Penne With Broccoli And Mushrooms

Chicken Penne with broccoli and mushrooms

2 chicken breasts (cut in small pieces)
1 small head of broccoli (cut in small florets)
1/2 package fresh mushrooms (sliced)
1 handful Cherry Tomatoes (sliced in half)
1-2 garlic cloves (crushed)
1/2 small onion (chopped)
1/2 cup Parmesan cheese
1 8 oz. package Penne pasta
(Note: I used a brand called Banza, which is made from chick peas. You can use another variety of pasta, as well. )
Olive oil
Salt
Pepper
Tumeric
Cajun

Directions:

Fill a large pot with water and bring to boil. Add the Penne pasta and reduce heat a little. Cook the pasta for approximately 10 minutes, or pasta is tender. Remove from heat and strain and then rinse with cool water. Set the pasta aside to cool.

Coat a large skillet with olive oil. Add the chicken pieces and cook over medium heat, until they become slightly crisp. Add the garlic and stir. Add the broccoli mushrooms and onions and stir. Cover the skillet with a lid and simmer, until the vegetables are tender or just a little crisp. Sprinkle with turmeric, salt, pepper and Cajun to taste. Stir the vegetable and chicken mix, so it is well coated with the seasoning. Add the sliced cherry tomatoes and Parmesan cheese on the top and stir slightly, so tomatoes warm and the cheese starts to melt.

Top with a little more Parmesan cheese, if desired and serve warm.
