In this blog, I wanted to share a recipe for some Chocolate Zucchini Muffins I made over the weekend. I had a garden fresh zucchini I wanted to use and was also in the mood for something sweet, so thought this recipe was a good one to try. It is easy to make and includes some healthy ingredients. Give it a try if you are craving some seasonal goodness.
Ingredients
- 1/2 cup coconut oil ( I used Nutiva Organic brand)
- 1/2 cup dark chocolate chips
- 2 Tbsp. cocoa powder or 2 Tbsp. Juice Plus Complete protein powder (This is what I used for a nutritional boost.)
- 1/2 cup coconut palm sugar
- 1 cup flour or almond flour
- 1/2 tsp. baking soda
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup dark chocolate chips
- 1 cup zucchini, shredded with excess liquid squeezed off
Directions
Preheat over to 350 degrees.
In a small sauce pan, melt the coconut oil and half cup of chocolate chips. Grate the zucchini and drain off any excess water using a towel. In a medium bowl, combine the cocoa powder or Juice Plus Complete protein powder, coconut palm sugar, flour, baking soda, eggs, vanilla, melted chocolate and zucchini. Add the other half cup of chocolate chips. Stir until the mix is well-combined. Pour the batter into silicon muffin cups or paper lined cups. Bake for 18-20 minutes.
Note: I used my heart shaped muffin tin because I just knew I would love these.
