In the blog, I wanted to share a recipe for some pumpkin muffins I recently made. It is funny how we all start to crave certain things as the seasons change. The other day, I just couldn’t get the thought of pumpkin out of my head, so I decided it was time to bake something. This recipe is easy to make and includes some healthful ingredients including pumpkin, coconut oil, dark chocolate and a variety of spices. I have to say, it definitely took care of the craving. Give it a try if you are having thoughts of pumpkin or just want a nice treat.
Ingredients
- 1 (15 oz) can Pumpkin puree
- 2 Eggs, large
- 1-3/4 cups flour (You can also use almond flour)
- 1/2 tsp baking powder
- 1 tsp baking soda
- 1-1/4 cup coconut palm sugar
- 2 tsp cinnamon, ground
- 1/4 tsp pumpkin pie seasoning
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 tsp vanilla extract
- 1/2 cup coconut oil
- 1 Tbsp coconut milk
- 1 cup chocolate chips, dark
Directions
Preheat oven to 350 degrees.
Line a muffin pan with paper liners and set aside.
In a mixing bowl, add the pumpkin, eggs, sugar, coconut oil, vanilla and coconut milk and mix on medium speed until well blended. Add the flour, baking powder, nutmeg, cinnamon and pumpkin pie seasoning and mix until well combined. Add the chocolate chips. Spoon the mixture in the baking cups. Bake for 18 minutes.
