In this blog, I wanted to share a recipe for some Baked Parsnips Vegetable Medley I recently made. I just did a post about the health benefits of parsnips, so I thought it would be nice to share a recipe. I know that not everyone is familiar with parsnips, but they are a good seasonal vegetable to try and are abundant this time of year. Parsnips are tasty too and are easy to prepare. I had a few parsnips on hand and decided to pair them with some peppers, garlic and spices, which made them look festive. Give this recipe a try if you are looking for something different and want to include more vegetables in your diet.

Ingredients

  • 2-3 large parsnips, sliced
  • 1 orange pepper, sliced in thin strips
  • 1 red pepper, sliced in thin strips
  • Fresh parsley
  • 1-2 cloves of garlic, crushed
  • Olive oil
  • Salt
  • Pepper
  • garlic powder

Directions

Preheat oven to 350 degrees.

Place sliced parsnips in large baking pan, or baking sheet. Add the sliced peppers on top, along with the fresh parsley. Sprinkle with crushed garlic. Add the salt, pepper and garlic powder on top and sprinkle to taste. Drizzle olive oil on top of the vegetable mix. Bake for 35-45 minutes, or until the parsnips are soft and slightly crisp. Remove from oven and serve warm.

Note: Feel to free to make this recipe your own and add any other vegetables you like, such as carrots, sweet potatoes, etc.
