In this blog, I wanted to share a recipe for some Spinach Mushroom And Sausage Quiche I recently made. This recipe is easy to make and includes some healthful ingredients including spinach, mushrooms, onion and tomatoes. Spinach is rich in iron, which is good for your blood and helps keep your energy up. It is also rich in magnesium, so it good for your bones too. Give this recipe a try if you are looking for a healthy breakfast or a new recipe to share with family or friends.

Ingredients:

  • 8 oz button mushrooms rinsed and sliced
  • 1 small red onion, chopped
  • 1 clove garlic, minced 
  • 1 large handful fresh spinach, thawed
  • 1 lb Italian sausage
  • 4 large eggs 
  • 1 cup milk (You can also use coconut milk or almond milk)
  • 1/8 cup feta cheese 
  • 1/4 cup Parmesan, grated 
  • 1/2-3/4 cup shredded cheddar cheese
  • 6-9 Cherry tomatoes (cut in half)
  • Salt and pepper to taste 
  • Cajun seasoning to taste

DIRECTIONS

Preheat the oven to 350ºF. In a large frying pan, brown the sausage. Add the mushrooms, onions and garlic and stir, until the onions are translucent. Add the spinach and stir. Add the salt, pepper and Cajun seasoning. Remove from heat when the spinach is cooked. Drain any excess grease from the mix and set aside.

In a medium sized bowl, beat the eggs. Add the milk, Parmesan and feta cheese and stir until well mixed. Coat a 9-inch pie dish with non-stick spray. Spoon the sausage and vegetable mix into the dish. Pour the egg mixture over the top of the mixture. Top with the cheddar cheese. Place the pie dish on a baking sheet for easy transfer in and out of the oven. Bake the quiche for 45 minutes, or until the top is golden brown. Add the cherry tomatoes to the top and bake for another 5-10 minutes. Remove from oven. Let the quiche set for 10-15 minutes. Cut into slices and serve.
