In this blog, I wanted to share a recipe for some Healthy Thai Chicken Salad, I recently made. This recipe is easy to make and includes some healthy ingredients including: cabbage, garlic, onions and cashews. I’ve never been that into cabbage, but this recipe sounded good to me and it turned out being pretty darn tasty. I really like the Thai dressing. It really complimented the cabbage and other vegetables nicely and gave it a little sweet and tangy flavor. Give it a try if you are looking for a new recipe to make. It is a good one to add in a variety of those healthy rainbow colored vegetables to your diet.

Healthy Thai Chicken Salad

Healthy Thai Chicken Salad

  • 1 Tbsp. coconut oil
  • 1 small red onion chopped fine
  • 2 cloves garlic, minced
  • 1 pd boneless skinless chicken breasts chopped into small chunks
  • 2 Tbsp. lime juice (1/2 fresh lime juiced)
  • 3 Tbsp. Tamari Soy Sauce
  • 1 Tbsp. fresh ginger peeled and grated
  • 2 tsp. red pepper flakes
  • 1 Tbsp. honey to taste
  • 3 Tbsp. extra virgin olive oil
  • 4 cups shredded cabbage (red or green)
  • 1 red pepper diced
  • 3 carrots grated
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh cilantro chopped
  • 1/4-1/2 cup chopped spinach
  • 1/4 cup cashews

 

Directions

In a large frying pan, heat the coconut oil over medium heat. Season the chicken to taste with the salt and pepper. Add the onion and garlic and cook for two approximately two minutes, or so. Add the chicken and saute until it is  browned and fully cooked. Remove from heat and set it aside.

Dressing

In a small bowl, whisk together the lime juice, Tamari soy sauce, ginger, and red pepper flakes. Slowly whisk in the olive oil and blend until mixed in with the other ingredients. Add the honey to taste.

Salad

In a large bowl, combine the cabbage, red pepper, carrots, parsley, spinach, cilantro and chicken. Toss with the dressing, or serve it on the side. Top with cashews.
