In this blog I wanted to share a recipe for some Molasses Muffins. I came across this recipe a few years ago and I just had to try it. I don’t know about you, but I love the taste of ginger and molasses. It is so good. It’s been awhile since I made this recipe, but I made it quite a bit when I was trying to re-build my iron stores. Molasses is rich in iron and so are apples and raisins and it makes a tasty mix. Anyway-I thought I would pass the recipe along, although I changed it up a bit. I made it even healthier by using coconut oil and substituting part of the flour with ground flax seed. Give it a try if you like molasses and want to try something healthy for breakfast, or a snack.
Ingredients
1 cup flour
1/2 cup ground flax seed
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1- 1/2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
2 eggs
2/3 cup unsulphured molasses
1 apple, peeled and grated
1 carrot, grated
1/2 cup walnuts, chopped
1 cup golden raisins
1/4 cup coconut oil
Preheat oven to 350 degrees. Next, line a muffin pan with 12 paper liners.
Combine the flour, flax seed, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg in a large bowl and set aside.
In a mixing bowl, mix the eggs, molasses, apple, carrot, walnuts, and coconut oil together on low speed. Add the flour mixture and mix thoroughly, until all combined. Spoon the mix into the muffin tins and bake for about 18 minutes, or until a toothpick inserted in the middle of a muffin comes out clean.
Note: This recipe has no added sugar. It gets its light sweetness from the molasses, apples, carrots and raisins. If you prefer a little more sweetness, you can add 1/2 cup of sugar or coconut palm sugar.
