In this blog, I wanted to share a recipe for some Mexican Stuffed Sweet Potatoes I recently made. I don’t know about you, but I love Mexican recipes and this one is a winner. It is easy to make and includes some healthful ingredients including black beans, avocados and olives. It also includes some tasty spices that not only add flavor, but are good for your body and help promote immunity. Give it a try if you are looking for a tasty, new recipe to share with your family. You can serve it alone or as a delicious side dish.

Ingredients

  • 2 large sweet potatoes
  • 1 tablespoon olive oil
  • 1/4 cup chopped red onion
  • 1/2 cup chopped red and yellow bell peppers
  • 1/2 can (chopped black olives
  • 1 cup canned black beans drained & rinsed
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Sea salt to taste
  • Black pepper to taste
  • 1 avocado, cubed
  • 8-10 cherry tomatoes, sliced in small pieces
  • Parmesan cheese

Directions

Heat oven to 400ºF.

Place the sweet potatoes on a baking pan and prick with a fork. Place the pan in the oven and bake for 40 minutes. While the sweet potatoes are baking, heat the olive oil in a large frying pan. Add the onion and sweet peppers and saute until tender. Add the black olives and black beans. Season with chili powder, paprika, cumin, garlic powder, sea salt and black pepper and cook for an additional 2-3 minutes. When the sweet potatoes are soft and tender, remove from oven and let sit for 5 minutes or so. Slice the sweet potatoes in half and place on a plate. Spoon the black bean mix on top. Add the avocado, cherry tomatoes and sprinkle top with Parmesan cheese, if desired and serve.
