In this blog, I wanted to share a recipe for some Healthy Cucumber Avocado and Chickpea Salad I recently made. This recipe is not only easy to make, but includes some healthy ingredients including avocados, cucumbers and chickpeas. It has a good mix of nutrients your body needs too, including good fats from the avocado, protein and fiber from the chickpeas and vitamin C and vitamin K from the cucumber. Additionally it has some healthy carbs from the peppers. Give it a try if you like chickpeas and are looking for a new salad to brighten your day or the upcoming Easter holiday.

Ingredients

  • 2 tsp. smoked paprika
  • 1/2 tsp. basil
  • 1/2 tsp. oregano
  • 1/2 tsp. dried onion
  • 1/2 tsp. garlic powder
  • 1/2 tsp. chili flakes
  • pepper to taste
  • 2 Tbsp. avocado oil
  • 1 can chickpeas
  • 1 English cucumber
  • 1 orange or red bell pepper
  • 1/4 cup chopped cilantro
  • 1 avocado
  • 1 Tbsp. olive oil
  • sea salt to taste
  • pepper
  • fresh lime juice (juice 1/2 of fresh lime)

Instructions

Preheat oven to 400F. In a small bowl, add all of the spices together and mix. Add the avocado oil and mix until well blended. Add the chickpeas and stir to coat. Pour the chickpeas on a cookie sheet and bake for 20 minutes. Remove them from the oven, when done and let cool.

Wash and dice the cucumber, bell pepper and cilantro. Peel and dice the avocado. Place all the ingredients in a large glass bowl. Add the cooled chickpeas. Add the olive oil, sea salt, pepper and lime juice and mix together.

Serve alone or with chips or crackers. You can also use this salad as a filling for lettuce wraps.
