In this blog, I wanted to share a recipe for some Easy Pumpkin Muffins that I made over the weekend. I was having a craving for pumpkin, so I thought making some pumpkin muffins would be the perfect way to escape from the cool, cloudy weather we’ve been having in Minnesota. This particular recipe is easy to make and includes some healthful ingredients including: coconut oil, cinnamon and pumpkin. Like squash, pumpkin is rich in nutrients including vitamin A, C and E. It also contains a healthy amount of iron, potassium and fiber.  Give it a try if you are craving a sweet, seasonal treat.

Easy Pumpkin Muffins

INGREDIENTS

  • 1- 3/4 cups all purpose flour (I used Simply Balanced brand from Target, which is organic. You can also use almond flour or rice flour if you want to avoid gluten.)
  • 1 cup sugar (You can substitute 1 tsp. powder or liquid stevia for the sugar, if you want.)
  • 1/2 cup dark brown sugar (I used coconut palm sugar)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 2 eggs
  • 1- 15 ounce can pure pumpkin (I used Simply Balanced brand from Target)
  • 1/2 cup coconut oil
  • 1 teaspoon vanilla extract

INSTRUCTIONS

Preheat the oven to 350 degrees. Place 12 paper liners into standard size muffin baking pan cups. Measure the flour, sugar, baking soda, salt and spices in a medium bowl and mix together. Set the bowl aside. In a mixer, add the eggs, pumpkin, coconut oil and vanilla extract. Mix at a medium speed, until well blended. Add the dry ingredients to the mixture. Mix until all of the dry ingredients are blended in the batter. Using a large spoon, scoop the batter into the paper liners. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean. Serve warm or let them cool and serve later.
