In this blog, I wanted to share a recipe for some Easy Chocolate Avocado Truffles, I recently made. This recipe is not only tasty, but includes some healthy ingredients including dark chocolate and avocados, which are good for your body. Avocados are considered a super food and it’s no wonder why. They contain a variety of nutrients including: vitamin B6, vitamin E, vitamin K, vitamin C, folate, potassium, iron and more. Avocados also contain fiber and have plenty of good fats that help your body to function optimally. The dark chocolate is not only yummy, but is rich in antioxidants. Give this recipe a try if you a looking for a tasty treat or looking for something to give you a boost of energy.

  • 1 avocado (mashed)
  • 3/4 cup dark chocolate chips (The higher cacao content the better.)
  • 1/2 tsp vanilla extract
  • Pinch of cinnamon
  • 1-2 tsp of cocoa powder to coat

Note: You can also use unsweetened chocolate and then add 10-15 drops of stevia to sweeten.

Instructions:

Melt the chocolate using a double boiler. You can also use 2 different sized pots. Fill the one with water and bring it to a boil on the stove. Put the smaller pot on top of the boiling water and add the chocolate. Stir the chocolate, until it is completely melted and has a smooth consistency. Set aside.

In a another bowl, mash the avocado. Add the melted chocolate and stir until they are combined and free of clumps. Next add in the vanilla and cinnamon.

Place the mixture in the refrigerator for about 30 minutes or so. When the mix is cooled and slightly firm, use a spoon to scoop and roll into balls.

Roll the prepared balls in cocoa powder and serve.

Note: You can also roll them in coconut flakes.

If you have any left-over truffles, you can store them in an air tight container in the refrigerator.
