In this blog, I wanted to share a recipe for some Easy Asparagus Stuffed Chicken Breasts, I made the other day. I had some chicken breast on hand, as well as a bundle of asparagus and other vegetables, so I decided I was going to use these ingredients and create a healthy home-cooked meal. I typically like to cook chicken breasts on the grill, but it’s been a little chilly lately, so I opted to try something a little different for a change of pace. Since the chicken breasts, were kind of big, I decided to butterfly them open, so I could stuff them with my asparagus. I added some seasoning and cheese, as well. I didn’t follow a recipe, but have to say they turned out pretty tasty.  They are easy to make and contain some healthy ingredients too. Give it a try if you are looking for a quick and easy recipe.

Easy Asparagus Stuffed Chicken Breasts

Easy Asparagus Stuffed Chicken

  • 2 Chicken breasts (sliced down the center)
  • 1 bundle of asparagus stalks (cut in half)
  • Garlic powder
  • Paprika
  • Tumeric
  • Salt and pepper
  • Avocado oil
  • Parmesan cheese (Add to taste)

Directions

Butterfly the chicken breasts, so they are almost sliced in half. Coat the bottom of a large frying pan with avocado oil. Placed the sliced chicken breasts in the pan and brown on medium teat. Season with salt, pepper, garlic powder, tumeric and paprika and flip. When they are evenly browned, remove the pan from the heat and set aside. Using a fork, remove the chicken and place on a foiled lined baking sheet. You can also use a glass baking pan. Sprinkle the chicken with the crushed garlic. Add a handful of the asparagus. (I used 4-5 per chicken breast.) Top with some Parmesan cheese to taste. Fold the other side of chicken over. Use a couple of tooth picks to hold the chicken together. Do the same for the other chicken breast. Bake at 350 degrees for 25 to 30 minutes.

Note:

I chopped the remaining asparagus and sauteed it the same pan with a half package of fresh mushrooms and a small onion. I added a little more avocado oil to re-coat the pan. I served this with the chicken and some wild rice.
