In this blog, I wanted to share a recipe for some Chocolate Covered Peanut Butter Stuffed Dates. I just posted about the health benefits of dates, so I thought it would be a good idea to share a recipe using them and this one is a good one. I am always looking for recipes that provide energy and this recipe has a good mix of nutrients and ingredients to give you a quick boost. Dates have a variety of antioxidants, vitamins and minerals your body needs to function optimally. They also contain natural sugars and fiber that give your body vitality and vigor. Additionally, they are a good source of iron. This recipe is easy to make and tasty too. Give it a try if you are looking for an afternoon pick me up or a healthy Easter treat.
Ingredients
- 12 Medjool Dates, pitted
- 1/4 cup peanut butter
- 12 oz. bag Dark Covered Chocolate Chips.
- 1 Tsp. Coconut Oil
- Walnuts (optional)
Directions
Slice open a side of the dates and move the pits. Use a teaspoon to fill each date with peanut butter and top with a walnut and then place on a cutting board or cookie sheet. Set aside. Using a double boiler melt the chocolate chips and coconut oil. You can also boil water in a large pot and then place a smaller pot on top with the chocolate chips and coconut oil. Stir constantly to help melt the chocolate and to make sure it doesn’t burn. Remove from the heat when the chocolate is completely melted. Use a teaspoon to drizzle the chocolate over the stuffed dates, making sure they are completely covered. Place the chocolate covered date back on the cutting board to dry. Place the filled board or cookie sheet in the freezer for a half hour or so, to spped up the process. Store the dates in an airtight glass container in the freezer.
