In this blog, I wanted share a recipe for some Chocolate Coconut Peanut Butter Energy Balls I recently made. These energy balls not only give you a boost of energy, but taste great! I don’t know about you, but I love a chocolate peanut butter mix. These energy balls have some healthy ingredients too including: flax seed, coconut, nuts, honey and dark chocolate. It’s a yummy combination that includes good fats, iron and good antioxidant mix. They are easy to make and a great pick me up. Give the recipe a try if you are looking for a healthy snack.
Ingredients
1 Cup Chopped Nuts (Pecans, Walnuts, Hazelnuts, etc.)
2/3 Cup Coconut Flakes (I used an organic version)
1/2 Cup Peanut Butter (I used a natural brand with less sugar)
1/2 Cup Ground Flaxseed
3/4 Cup Dark Chocolate Chips (You can also use mini-chocolate chips.)
1/3 Cup Raw Honey
1 tsp. Vanilla Extract
In a medium size bowl, combine all of the ingredients and mix together, until thoroughly combined. Place the dough in the refrigerator for about a half an hour. Shape into 1″ balls. Store in an air-tight container in the refrigerator.
Note: You can also add chia seeds or dry oatmeal. You may have to use less nuts if you add other ingredients, or use a little less flax seed.
