In this blog, I wanted to share a recipe for some Chocolate Coconut Energy Balls that I made over the weekend. These little morsels are not only tasty, but provide a wholesome way to boost your energy. They also contain a bunch of healthy ingredients that are good for your body including: coconut oil, cashews and dates. This recipe is also super easy to make and only contains a few ingredients.
In my book, Wholey Cow A Simple Guide To Eating And Living, I talk about the importance of adding more goods fats (MUFAS) to your diet, which help provide sustained energy. Your body needs good fats to function properly and both nuts and coconut oil contain a good amount of MUFAS. We also need iron in order for our bodies to perform certain tasks and both cashews and dates are a good source of iron. They also contain other nutrients your body needs such as magnesium, selenium, potassium, fiber and more.

Ingredients
- 3/4 cup Cashews
- 2 Tbsp. Cocoa powder
- 1/2 Tbsp. Coconut oil
- 12 pitted Medjool dates
- 3/4 cup Coconut milk
- 2 Tbsp. Coconut Flakes (I used organice brand)
- 1/2 Tsp. Salt
Directions
To make the energy balls, place the cashews in a food processor or high speed blender, such as a Vitamix to crush. Pulse until the nuts are evenly crushed. Next add your cocoa powder, coconut oil, dates, coconut milk and coconut flakes and blend well, until the mixture forms a thick paste.
Using a spoon, scoop out enough of the mixture to form a round ball. You can roll the balls in coconut flakes or dip them in cocoa powder. Place the prepared balls in a cake pan lined with parchment paper, or place on a cutting board. Place the pan in the freezer for an hour or more to firm and serve. Store the balls in air-tight container in the freezer.
