In this blog, I wanted to share a recipe for some Black & White Bean Soup that I recently made. I don’t know about you, but soup sure seems to hit the spot with the cooler temperatures. I was looking for something different to try and came across a recipe on Pinterest that sounded good. The recipe called for white beans, but I decided to add black beans as well, to give the soup a little more variety. I also added some chicken and a few additional spices to add a little more flavor and it sure did. In fact, this soup turned out pretty darn tasty. Give it a try if you are looking for something to warm you up along that some healthy ingredients.

Ingredients

  • 4 chicken thighs, cut in small cubed pieces
  • 2 tablespoons ghee or butter
  • 1 tablespoon olive oil
  • 1 medium red onion, diced
  • 6 cloves garlic, minced
  • 6 cups chicken broth 
  • 4 medium sized tomatoes, diced
  • 1 teaspoon garlic powder
  • 1 teaspoon sea salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon tumeric
  • 1/2 teaspoon black pepper
  • 4 (15 ounce) cans white beans, drained and rinsed
  • 4 (15 ounce) cans black beans, drained and rinsed
  • 4 cups fresh baby spinach
  • 2-3 sprigs fresh basil, chopped

Instructions

Place the ghee in a large frying and melt on medium heat. Add the cubed chicken pieces and saute, stirring occasionally until the chicken pieces are browned. Remove from heat and set aside.

In a large pot, heat the olive over medium high heat. Add the onion and garlic. Cook until the onions are translucent and garlic is slightly browned, (about 2-3 minutes), while stirring occasionally. Add in the chicken broth, tomatoes, basil, paprika, tumeric, garlic powder, salt and pepper. Add the chicken pieces. Bring the mixture to a boil then reduce heat and simmer for 5 minutes or so to combine all of the flavors together. Stir in the black and white beans and then add the spinach. Continue to simmer until the spinach has wilted. Remove from heat. Add additional salt and pepper, or other spices to taste. Serve with sour dough bread or crackers. You can also top with Parmesan, if desired.
