In this blog I wanted to share a recipe for some Black Bean Butternut Squash Soup I recently made. This is a hearty recipe that incorporates some healthy ingredients including butternut squash, which is prevalent this time of year. The butternut squash pairs well with black beans and spinach and when you add in the spices, this recipe makes for some great fall comfort food. Give it a try if you are looking for something different. It is easy to make and is pretty tasty.
Ingredients
- 1-1/2 pounds chicken breasts, chopped (3 small chicken breasts)
- 1 (15-ounce) can black beans
- 2 cups butternut squash, cubed or spiral noodles
- 1 cup fresh spinach
- 3 cloves garlic, minced
- 1 medium size onion, chopped
- 1/2 red bell pepper, chopped
- 1/2 green pepper, chopped
- 1 cup coconut milk
- 1 bouillon cube
- 1 cup chicken broth
- 1/4 tsp Allspice
- 1/4 tsp cayenne pepper
- 1/2 tsp pepper
- 1 tsp salt or to taste
- 2 tbsp coconut oil
Directions
In a large frying pan, add the coconut oil and melt over medium-high heat. Add the chicken pieces and stir until lightly browned. Add the onions and bell peppers cook and cook until onions are soft, about 3 minutes. Stir in the garlic and cook for 1 minute, or so. Add the salt and pepper. Transfer the mix to a large pot and cook on medium-high heat. Add the butternut squash and black beans. Stir in the coconut milk, chicken broth, bouillon cube, allspice and cayenne pepper and bring to a boil. Reduce heat to simmer for 20 minutes. Stir in the spinach and cook for about 4 minutes. Serve with garlic bread.
