In this blog, I wanted to share a favorite appetizer recipe of mine. I just got done making it to bring along to our Christmas get together tonight. It is easy to make and includes some healthy ingredients including: peppers, black beans and onions. It also includes a variety of colors of the rainbow and is quite festive. Give it a try if you are looking for something quick and good to prepare for yourself or to share with others.
Best Black Bean Salsa
1 15 oz. can black beans (drained)
1 16 oz. can corn (drained)
1 red bell pepper (diced)
1 green bell pepper (diced)
1 yellow bell pepper (diced)
1/2 cup red onion (diced)
1 garlic clove (minced)
1 tsp. cilantro
1/4 cup olive oil
4 tbsp. red wine vinegar
1 tsp. lime juice
Freshly ground pepper
Salt
Tortilla chips
Seed and dice the bell peppers. In a salad bowl, combine bell peppers, onion, corn kernels, garlic and cilantro. Toss to mix. Add black beans, olive oil, vinegar and lime juice. Salt and pepper the mix to taste. Toss again. Serve with tortilla chips.
Note: If corn is in season, you can use fresh corn. Use 1 or 2 ears. You will need to cut it off the cob.
