In this blog, I wanted to share a recipe I made over the weekend for some Chocolate Date And Nut Energy Bites. This recipe is easy to make and contains some healthy ingredients including, dark chocolate, coconut oil, dates, nuts and seeds that is sure to give you more energy.
In my book, Wholey Cow A Simple Guide To Eating And Living, I talk about the importance of getting back to the basics of eating. Early on, people ate from the land. Whole foods, such as nuts and seeds, were plentiful and provided sustenance and energy. Today more than ever, people need to include more whole foods in their diet to help their body flourish. Nuts and seeds provide a host of healthy ingredients. Just a handful packs a powerful punch of protein, vitamin E, magnesium, selenium, iron, copper and more. Nuts and seeds also contain monounsaturated fats (MUFAS), which are the good fats that help provide sustained energy for your body. Nuts and seeds have other benefits, as well. They are loaded with antioxidants, which help fight free radicals and also have anti-inflammatory properties, which help fight disease. In addition, nuts and seeds help maintain hormonal balance in the body.

Chocolate Date And Nut Energy Bites
- 1/2 cup ground raw pumpkin seeds (You can also use sunflower or sesame seeds.)
- 1/2Â cup ground flax seeds
- 1/2 cup raw Cashew nuts (You can also use Brazil nuts or almonds.)
- 1-1/2 cups of Medjool dates (Make sure the pits are removed.)
- 4 oz. dark chocolate (I used a brand with a high cacao content. Look for 62 to 72% cacao content for the most nutritional benefit.)
- 1 Tbsp. coconut oil
Directions:
Place the first 4 ingredients into a food processor and blend until they stick to the side of the bowl. Next, roll the mix into evenly formed balls and place them on a cookie sheet lined with parchment paper. Set aside.
Melt the chocolate chips and coconut oil in a double boiler. If you don’t have a double boiler, you can also use 2 different size pots. Fill the larger pot with water and bring to a boil. Add the chocolate chips and coconut oil in the smaller pot and place on the surface of the boiling water. Stir the chocolate and coconut oil, until it is melted. Remove from heat and let it cool slightly. Using a spoon, dip the balls in the chocolate to cover completely. Place them back on the parchment paper to set. Place the cookie sheet in the refrigerator for at least 30 minutes or until the chocolate is hardened.
