In this blog, I wanted to share my recipe for some warm spinach and Feta salad with black beans. I don’t know about you, but I love spinach and sometimes eat it 3 times a day.

Yeah—I know that might sound excessive, but spinach is a good source of iron and when you have an iron deficiency, eating a lot of iron-rich foods is important. I often add spinach to my morning smoothies or eggs. I also add it to a variety of dishes, when cooking and eat a lot of spinach salads. This winter, I’ve been trying to  include more warm salads in my diet, as I tend to always feel cold. Eating warm foods helps with this, as well as including more warming foods in your diet, such as soups, stews, tea, garlic, peppers and ginger. Anyway—this warm spinach and feta salad with black beans has become a  favorite of mine.

The recipe includes some healthy vegetables, warming spices and is super easy to make. I like to serve it with a few slices of avocado to include some good-fats in my meal. You can also serve it with a clementine or some other seasonal fruit to get a little boost of vitamin C and other healthful nutrients. Give it a try if you looking for something that is wholesome, colorful and delicious.

Warm Spinach And Feta Salad With Black Beans

  • 2  large handfuls fresh spinach (Approximately 1/2 prepared bag)
  • 1 small red onion chopped
  • 1/2 can black beans
  • 6-8 cherry tomatoes halved
  • 1 clove garlic crushed
  • 1 handful feta cheese crumbles (Add to taste)
  • Avocado cut in slices
  • cajun seasoning
  • Tumeric
  • soy sauce or coconut aminos

Coat the bottom of a large frying pan with olive oil. Add the spinach, onion, and garlic. Stir on medium heat, until the onion begins to brown and the spinach is slightly wilted. Sprinkle with turmeric and Cajun seasoning. Add the tomatoes and stir slightly, until they are just warm. Spoon the salad on a plate. Add the feta cheese on top. Serve with avocado slices and any other garnish you may like. Top with a little coconut aminos or soy sauce, if desired.
