Since the Fourth of July is just around the corner, I thought I would share a healthy, festive recipe for some Red White And Blue Strawberry Coconut Bites. These little bites are easy to make and are made with strawberries, blueberries and a healthy version of whipped cream. They make a great little appetizer or you can serve them for dessert at your family gathering. Give them a try if you’d like. They are quite tasty.
Red White And Blue Strawberry Coconut Bites
Ingredients
- 10Â large strawberries cut in half (Leave the stems on to make the bites easy to grab)
- 40Â blueberries
Coconut Whipped Cream Ingredients
- 1-14 ounce can of full fat, unsweetened coconut milk chilled in the refrigerator overnight. (I used Whole Foods 365 organic brand, but you can use other brands.)
- 1 tsp. of high-quality vanilla extract
- 1/4 tsp. of stevia extract or to taste (If you prefer, you can use 1 tablespoon of coconut sugar or honey. I use stevia.)
Directions:
Chill your mixing bowl and whisk attachment in the freezer for 10 minutes before making the coconut whipped cream. When bowl is chilled, remove the thick and hardened coconut cream from the refrigerated can and transfer it into your mixing bowl. Leave any liquid in the can. (You can save this and add it to smoothie or something else if you want.) Whisk together all the coconut whipped cream ingredients in the mixer for several minutes. It should be thicker like a mousse. Spoon the whipped coconut cream immediately on sliced strawberries and place on a serving plate. Garnish with blueberries and serve immediately.
