In this blog, I wanted to share a recipe for some Easy Olive Tapenade I made over the weekend. It is super easy to make and contains a variety of healthy ingredients like olives, garlic and cucumbers. It also contains some good fats your body needs to function optimally. With Thanksgiving and the holidays just around the corner, it is nice to have some easy and healthy appetizers to share with family and friends. Give it a try if you like the taste of olives and are looking for a simple recipe to try.

Easy Olive Tapenade

1 cup kalamata olives, pitted and drained (You can also use half Kalamata olives and half black olives.)
2 Tbs capers, drained
3-4 Tbsp. olive oil
2 cloves garlic, crushed
¼ cup fresh parsley, washed and drained well
1 large cucumber sliced
Parmesan cheese (optional)

Directions:

Put the olives, capers, garlic and parsley in a blender or food processor and blend until they form a smooth texture. Using a spatula, scrape the mixture into a small bowl and set aside. Place the sliced cucumbers on a plate. Using a teaspoon, spoon some of the Tapenade on each cucumber slice. Garnish with a small spring of parsley.

Note: You can also serve the Tapenade with crackers, or some other root vegetable and top with a little Parmesan cheese.
