Here’s a recipe I thought I would share for the holidays. It is super easy to make and contains some healthful ingredients including unsweetened coconut flakes and rich, dark chocolate. If you plan on having a dessert, why not enjoy one that will give you a burst of energy? I actually make these throughout the year, as they are quite tasty.
Coconut Cups
8 oz. bittersweet chocolate chopped ( I used Whole Foods 365 brand of baking chunks that was 67% cacao)
1-1/2 cups toasted unsweetened coconut flakes
Note: You may also add in any type of toasted nut. I added in some chopped walnuts, but almonds would also be very good in the mix.
Directions:
Line a small muffin tin with baking cups. Using a double boiler, melt the chocolate, stirring frequently, until the chocolate is almost melted, about 5 minutes. Remove from the heat and whisk until completed melted. Add the coconut and stir to combine. Add in nuts if desired.
Drop the mixture by the spoonful into the prepared baking cups. Set aside to cool and firm up. I like to place them in the freezer to harden faster. Store in an airtight container in layers separated by waxed paper for up to 2 weeks in refrigerator or freezer.
