In this blog I wanted to share a recipe I recently made for some Quinoa Salad With Snap Peas. This year I have a bunch of fresh vegetables and herbs growing in my garden, so I have been looking for new recipes to include them in our meals. This recipe includes some healthy ingredients that are good for your body and has a unique taste. The quinoa gives it a nutty flavor and the snap peas and cherries give it a little sweetness, which makes a great combination. This recipe is also easy to make, which is nice if you are short on time. Give it a try if you are looking for something different to make.
Ingredients
- 2 cups water
- 1 cup quinoa
- 1 cup snap peas
- 1/4 cup balsamic vinegar
- 2 Tbsp. extra-virgin olive oil
- 1/4 cup tart cherries
- 1/4 cup chopped pistachios
- 3 Tbsp. chopped fresh parsley
- Salt and pepper, to taste
Directions
In a saucepan over high heat, bring the water to a boil. Add the quinoa and reduce the heat to low. Cover and simmer until the grains are tender and the water is absorbed, about 15 minutes. Fluff with a fork and transfer to a large bowl.
Add the snap peas and cherries to the bowl with the warm quinoa and stir to combine. Season with salt and pepper and garnish with the whole parsley leaves. Serve warm or at room temperature.
