In this blog, I wanted to share a recipe for some Pumpkin Muffins With Chocolate Chips. I don’t know about you, but I have been craving pumpkin lately. Seasonal cravings are common, especially in the fall. We naturally start to crave more comfort foods, as well as warming foods. That’s because seasonal foods provide vitamins and minerals your body needs for a particular season. Pumpkin is rich in vitamin A, vitamin C, manganese, iron and more. It is also loaded with fiber, so it helps with digestion. Additionally it helps promotes a healthy microbiome, which helps boost immunity during cold and flu season. If you have been craving pumpkin, give this recipe a try. It is easy to make and quite tasty.
Ingredients
- 1/2 cup coconut palm sugar
- 1/2 cup granulated sugar
- 1 -2/3 cup all-purpose flour
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. ginger
- 1 tsp. baking soda
- 1/4 tsp. baking powder
- 1/4 tsp. salt
- 2 eggs
- 1/2 cup coconut oil
- 1 cup 100% pure pumpkin
- 1 cup chocolate chips (I used a brand with a high cacao content.)
- 1/2 cup chopped pecans or walnuts
Directions
In a large bowl, combine the sugar, flour, cinnamon, nutmeg, ginger, baking soda, baking powder, and salt and set aside. In a mixer, combine the eggs, coconut oil, and pumpkin and mix on medium setting. Add the dry ingredients and mix until combined. Add the chocolate chips and nuts and combine. Spoon the batter into 12 greased muffin cups.
Bake at 350℉ for 18-20 minutes, or until center springs back when touched. Cool in pan for about 5 minutes, then remove to a plate or cooling rack.
