In this blog, I wanted to share a tasty recipe I recently made for some Mediterranean Chickpea Salad. This recipe is easy to make and includes some healthy ingredients including avocados and black olives, which provide good fats your body needs and craves. It also includes chick peas, which are rich in fiber and aid in the digestion process and promote a healthy gut. Give it a try if you are looking for a healthy new recipe.

Ingredients

  • 3 Tbsp. extra virgin olive oil
  • 3 Tbsp. lemon juice from 1 large lemon
  • 1 garlic clove, minced
  • 1/2 tsp. sea salt or to taste
  • 1/8 tsp. black pepper
  • 1-1/2 cups cherry tomatoes halved
  • 1 cucumber cut in small pieces
  • 15 oz can chickpeas drained and rinsed
  • 1 small red onion, chopped
  • 1 avocado cut in small pieces
  • 1 can sliced black olives
  • 4 oz feta cheese (optional)

Directions

In a small bowl, combine the olive oil, lemon juice, garlic, salt and pepper and whisk to together to make the dressing. Set aside.

In a large glass bowl, add the chickpeas, tomatoes, black olives, onion, cucumber, avocado and feta cheese. Pour the dressing on top and toss to coat. Serve alone or as a side with your favorite entree.
