In this blog, I wanted to share a recipe for some Healthy Strawberry Cucumber Salad I made up at the lake. This recipe brings together a sweet and sour taste, along with a little crunch to create a delightful mix. It is a perfect recipe for a hot summer day. It is easy to make too. It also includes some healthy ingredients including strawberries and cucumbers, which are abundant during the summer season. The strawberries offer a sweet, delicious flavor and are a good source of vitamin C and iron. The cucumbers give the recipe a bit of a crunch and are also hydrating, so they are great to eat when the weather is warm. They also are low in calories, yet rich in fiber. Give this recipe a try if you are looking for something tasty and simple to make.
Ingredients
- 1 pints strawberries, stemmed and sliced
- 1 large cucumber, roughly peeled and sliced thin
- 1/4 cup balsamic vinegar or white balsamic vinegar
- 1/4 cup honey (You can also use 1/8 tsp. stevia to sweeten, or less. Add to taste.)
In a large bowl, combine the sliced strawberries and cucumbers. Add the balsamic vinegar and honey and stir to coat. Serve immediately or chill for an hour.
Note: You can also add in cilantro or top with slivered almonds.
Double the recipe if you are bringing it to a family gathering or picnic.
