I this blog I wanted to share a recipe for some Healthy Chocolate Brownies I recently made. This recipe includes some healthy ingredients including sweet potatoes, which are an extremely nutritious vegetable.  Sweet potatoes are high in fiber and protein. They also contain vitamin C, vitamin B6, potassium, copper and niacin, which helps blood flow to your joints and muscles and keeps your body flexible. It is also easy to make and tastes yummy. Give it a try if you been craving chocolate, or want a sweet treat.
Ingredients
1 cup sweet potatoes, cooked
1/4 cup cocoa powder
1/2 cup cashew butter (You can also use almond butter.)
1/8 cup honey
1/8 cup maple syrup
1/2 cup dark chocolate chips (I used one with a high cacao count)
Directions
In a mixer add the sweet potatoes, cocoa powder, cashew butter, honey and maple syrup. Blend together on medium speed until all the ingredients are well mixed. Add the the chocolate chips and blend just until folded in. Spread the brownie batter in a 9″ x 9″ cake pan lined with parchment paper. Bake at 350 degrees for 18-20 minutes. Let cool slightly. Cut into small squares.
