In this blog, I wanted share a recipe for some Festive Berry Spinach Salad. I really like this salad and thought it would be a great one to share for the Fourth of July Holiday next week. Did I say Fourth of July, wow, where has the time gone? Anyway—this recipe is easy to make and includes some healthy ingredients including spinach, which if you follow my blog probably already know is a favorite of mine. It also includes some healthy berries including strawberries and blueberries, which are rich in antioxidants and other nutrients. It also has some apples and nuts, which give the salad a little crunch, as well as add fiber and some good fat. Give it a try if you are looking for a good, healthy item to bring to a picnic, gathering at the lake or back yard BBQ.
Ingredients
Salad
- 10 oz bag baby spinach
- 1 lb fresh strawberries, hulled and sliced
- 1 small container of blueberries
- 2 apples, peeled and cut in small pieces
- 1 small red onion , thinly sliced or chopped
- 1 cup pecans, walnuts or almonds
- 1/2 lemon, squeeze for juice
Dressing
- 1/2 cup balsamic or red wine vinegar
- 1/2 cup olive oil
- 1 Tbsp dijon mustard
- 1 Tbsp honey or several drops stevia to taste
- Salt and freshly ground black pepper
Directions
In a small bowl, combine the vinegar, olive oil, mustard, honey or stevia and salt and pepper. Stir and set aside.
Pour the bag of spinach in a large glass bowl. Next add the strawberries and then the apples. Then add the blueberries, onions and nuts. Combine altogether before serving. Top with the juice from the lemon and serve with dressing.
Note: You can also add crumbled feta cheese or blue cheese if desired. You can also add grilled chicken breast to add a little protein to your salad.
