In this blog, I wanted to share a recipe for some Easy Cashew Chicken Stir Fry I recently made. I had a bunch of fresh vegetables in my refrigerator, so I decided I wanted to make something to combine all of thisĀ garden goodness. The foods we eat are so much more appetizing when you use a variety of rainbow colors. They not only make it more visually appealing, but each color has its own unique set of nutrients that help certain areas of body function better. I don’t know about you, but I love all the different combinations of colors and flavors together. It just seems to make eating and cooking more fun and enjoyable. If you have some fresh vegetables in your refrigerator you want to use up, you might want to give this Easy Cashew Chicken Stir Fry recipe a try.
Easy Cashew Chicken Stir Fry
- 1 Tbsp avocado oil
- 1 lb boneless skinless chicken breasts, cut into 1-inch pieces
- Salt and pepper, to taste
- 3 cloves garlic, minced
- 2 cups broccoli florets
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 3/4 cup zucchini slices
- 1/2 cup carrots, chopped
- 1/3 cup unsalted cashews
For the sauce:
- 4 Tbsp. tamari (or soy sauce)
- 3 Tbsp. all-natural peanut butter
- 2 Tbsp. honey
- 1 tsp. sesame oil
- 1 Tbsp. grated ginger
- 2 or 3 Tbsp water
Directions
In a small bowl, whisk together tamari (or soy sauce), peanut butter, honey, sesame oil, and grated ginger to make the sauce. Add 2 or 3 tablespoons of water to the mix to make desired consistency you prefer, and set aside.
In a large skillet, drizzle avocado oil and add chicken. Season with salt and pepper and sautƩ until browned. Add the garlic and sautƩ for approximately 30 seconds or so, mixing it with the chicken.
Add broccoli, bell pepper, red pepper, onion, zucchini slices and carrots to the skillet with the chicken and mix everything together. Cook an additional 5 minutes, or until the veggies are tender. Top with the cashews and serve alone or with rice.
