In this blog, I wanted to share a recipe for some Chocolate Nut Date Bars I recently made. I don’t know about you, but I love easy recipes and this one is super simple to make. It only has three ingredients: chocolate, dates and nuts. I love this combination, as it has a sweet, salty taste that is delicious. It’s nutritious too. Dates are loaded with a variety of antioxidants and nutrients your body needs. Some nutrients found in dates include potassium, calcium, magnesium, vitamin B6 and fiber. They are also a good source of iron, which is important for those suffering with iron deficiency and is needed for blood oxygenation and energy. Nuts are also nutritious and provide your body with protein, vitamin E and healthy fats (MUFAS) that help keep your body functioning properly. If you are looking for a tasty treat that will give you some energy to boot, you might want to give this recipe a try.

Ingredients

  • 1 cup medjool dates, pitted and packed
  • 1 -1/2 cups nuts (I used all pecans, but you can use almonds, walnuts, cashews, etc.)
  • 1 cup dark chocolate chips, melted

Directions

Line an 8″ x 8″ pan with parchment paper and set aside. Add the dates and nuts in a high speed blender or food processor and process until the dates and nuts are mixed well and nuts are broken down. The mixture should be sticky. Pour the mixture in the prepared baking pan and press down evenly. Melt the chocolate chips using a double boiler or use 2 pots different size pots. Fill the larger one with water and bring to boil and add the chocolate chips in the smaller pot and set on top of boiling water in other pot. Using a spoon, stir constantly until the chocolate is completely melted. Remove from heat. Pour the melted chocolate over the date and nut mix and spread evenly. Place the bars in the freezer for 20-30 minutes to firm up the chocolate. Remove the bars from the pan by grabbing the parchment paper and place on cutting board to slice. Cut the bars into small squares.
