In this blog, I wanted to share a recipe for some Banana Strawberry Rhubarb Bread I recently made. I had some fresh rhubarb from my garden I wanted to use and wanted to make something other than a pie or a crisp. I finally decided to make some fresh home-made bread. I used a banana bread recipe that I really like, but changed it up a bit by substituting some fresh strawberries and rhubarb for a few of the bananas. It ended up being a tasty mix, which I will definitely make again. This recipe is easy to make and includes some healthy nutrients including vitamin C, vitamin K, magnesium, calcium, iron and fiber . Give it a try if you are looking for something different and enjoy the taste of rhubarb.
Banana Strawberry Rhubarb Bread
Ingredients:
1 stick butter softened (You can also use coconut oil, or half butter and half coconut oil.)
3/4 cup sugar (You can also use coconut palm sugar.)
2 eggs
1-1/2 cups unbleached flour (You can also use almond flour.)
1 tsp. baking soda
1/2 tsp. salt
1/2 cup ground flax seed
1 large ripened banana, mashed
1 cup fresh sliced strawberries (Organic is the best option. See Dirty Dozen list.)
1 cup fresh rhubarb cut into small chunks
1 tsp. vanilla extract
1 cup chopped walnuts (You can also use almonds or pecans.)
Directions:
Preheat oven to 350 degrees. Grease a bread pan with some olive oil to prevent the bread from sticking. In a mixing bowl, cream the butter, and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Add the flour, baking soda, and salt. Fold in the mashed banana, strawberries and rhubarb. Add the vanilla, and nuts. Pour the mixture into the prepared bread pan. Bake for approximately 50-60 minutes. Let the bread cool a bit. Serve warm, or serve after the bread has cooled entirely. It is good both ways.
