In this blog, I wanted to spotlight the health benefits of the pear.

Pears are a popular choice for many consumers, especially in the fall when they are abundant. Like the banana and apple, pears are convenient to eat and are quite tasty. They are sweet and have a soft, appealing texture. Pears are loaded with many nutrients that help your body function optimally too.

Some nutrients in pears include:

  • Vitamin C
  • Vitamin K
  • Copper
  • Iron
  • Magnesium
  • Manganese
  • And more

Pears grow on trees that produce a high energy, nutrient dense fruit. While pears do contain some natural sugar, they are one of the lowest calorie fruits available. Pears contain right around 100 calories, making them a popular choice for many people, especially those looking to lose weight. Pears contain a healthy amount of fiber, which is beneficial for the digestion process. The high fiber content, which helps make you feel full, coupled with an assortment of vitamins and minerals, makes the pear a perfect food choice and delicious snack.

There are other health benefits of the pear too. Pears are an anti-inflammatory food and can help boost your immune system, which is great, especially for those suffering from arthritis and autoimmune diseases. Pears also help lower blood pressure and cholesterol and are beneficial in the prevention of a number of different forms of cancers. In addition, pears help improve blood circulation and may help build your red blood cell count, making them a good choice for many, especially those dealing with iron deficiency anemia.

Pears come in a variety of shapes, sizes and colors. In fact, there are approximately 3000 different species of pears available world-wide.  Wow—that’s quite an assortment. Some varieties look similar to the apple, where others have more of an elongated look and still others have several color tones, making them unique.

Pears can eaten for breakfast, enjoyed as a snack, or mixed in your favorite smoothie or bowl with other healthy ingredients. There are many possibilities.  Some people enjoy baking with pears too. Pears make a tasty pie, cobbler, crisp, muffins and more.

Make sure you reach for this nutrient dense fruit, while it is in season to enjoy its many health benefits.

Recipe: Ginger Chicken Broccoli Stir Fry Delight

In this blog, I wanted to share a recipe for some Ginger Chicken Broccoli Stir Fry Delight, I recently made. I had some chicken, broccoli and mushrooms and a few other fresh vegetables on hand and decided to turn them into a delicious, delightful meal. All it takes is a little meal planning, some healthy ingredients and a little time. It is not hard to eat healthy. Cooking can also be fun, if you give it a chance and play around a bit. I found this recipe on Pinterest, but changed it up a bit, by adding some additional vegetables, including some fresh cherry tomatoes and zucchini slices for some added vitamin C, iron and fiber. I also gave some options to if you wanted to make a few of the ingredients a little healthier. Give it a try if you like.

Ginger Chicken Broccoli Stir Fry Delight

  • 2 chicken breast, cut into pieces
  • 1-1/2 tablespoons olive oil
  • 2-3 cups (12 -14 oz) fresh broccoli, florets
  • 1 small onion, cubed or sliced
  • 8 ounces button mushrooms, sliced
  • handful of cherry tomatoes sliced
  • 1 small zucchini sliced
  • 1/2 cup chicken broth
  • 1/4 cup water
  • 1/4 cup soy sauce or coconut aminos
  • 2 tablespoons brown sugar or coconut palm sugar
  • 1-1/2 tablespoons grated ginger
  • 3 cloves garlic, grated
  • 1/2 teaspoon red pepper flakes
  • 1-1/2 tablespoons cornstarch
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon sesame oil

Combine the chicken broth, water, soy sauce or coconut aminos, sugar, grated ginger, garlic, red pepper flakes, black pepper, sesame oil, and cornstarch in a medium size glass bowl. Mix together until the cornstarch dissolves and then set aside.

Heat 1 tablespoon of the olive oil in a large frying pan over medium high heat. Add the chicken and cook for several minutes, until crisp. When fully browned, remove the chicken from the pan and place on a plate and set aside.

Add the remaining 1/2 tablespoon of olive oil to the frying pan and add the broccoli, mushrooms, onions and zucchini. Saute the vegetable mix until the broccoli turns bright green and the mushrooms are tender. This will take several minutes. Add the prepared sauce to the vegetables. Top with sliced tomatoes. Stir to coat the vegetables and warm tomatoes. Add the chicken back into the frying pan and stir to coat everything. Serve warm alone or with rice, or use quinoa.

You can add some other healthy ingredients to your eggs too, including black beans to bring your protein intake up even more. You can eat your eggs alone, or wrap them up in a corn or flour tortilla for a quick, easy meal.

    Nut butters such as peanut butter and almond butter are a great source of protein. Spread a little of this tasty butter on some whole wheat or sour dough toast. Look for healthier versions of peanut butter and other nut butters, as some brands may contain a lot of sugar, or other additives. Make sure you read the food label to know what you are buying.

    Many people are a fan of yogurt and enjoy eating it for breakfast. Yogurt typically contains a healthy dose of protein, but may contain sugar and other added ingredients. Look for a Greek version, as a healthier option. Keep in mind that plain yogurt is also better for you than one with added fruit or other flavors. You can add in your own fruit, nuts and seeds to make it healthier and provide more protein, good fat and nutrients.

    Breakfast smoothies are a popular choice for many people. They are easy to make, good for you and quite tasty. You can use a variety of ingredients including protein powder, nuts, fruit and vegetables. You can also add in a variety of super foods including coconut oil, chia seeds, maca, cacao chips and more. For a simple smoothie, you can try a scoop of vanilla protein powder, banana, handful of spinach, 1 tsp. of coconut oil and some almond or coconut milk. There are many options, so play around and see what appeals to you.

    Eating oatmeal for breakfast is a great way to start your day and will give you a burst of energy and protein. Feel free to add other items to enhance the taste and protein content. Tomato Avocado And Cucumber Salad

In this blog, I wanted to share a recipe for some summertime Tomato Avocado And Cucumber Salad I made over the weekend.

I had some garden fresh vegetables on hand including tomatoes, onions and cucumbers, so I thought I would add an avocado to the mix and make a healthy summertime salad. The mix proved not only be tasty, but included some healthful vitamins, including vitamin C and K, as well as some other healthful nutrients. It also included some good fat from the avocados, which our body needs.

If you have some vegetables available from your garden, or have some on hand from your local farmers market, you might want to give this recipe a try.

Tomato Avocado And Cucumber Salad

1-2 medium avocados, diced
3 medium tomatoes, diced
2 medium cucumbers, peeled and diced
1 small red onion, diced
2 tablespoons fresh cilantro, chopped
2 teaspoons fresh garlic, minced
2 tablespoons lime juice
1/4 cup sunflower seed oil
salt to taste
fresh black pepper to taste

In a large bowl, combine the chopped vegetables.

Add the sunflower oil and salt & pepper to taste. Serve alone, or as a side salad with other items.

Get Back To The Basics Of Eating With The Weston A. Price Diet…

When it comes to our food consumption habits, it would do us all good to back to the basics of eating. Over the years, we’ve gone astray from eating local farm-fresh produce, seasonal fruits and vegetables, whole farmed grains and pasture raised animals on a consistent basis. Today many of our fruits and vegetables are imported and available all year long. Our society has also grown accustomed to processed foods containing additives and preservatives and tend to eat more of them than real, wholesome foods. These foods often contain sugar and processed oils that are not good for your body and are a big part of the obesity epidemic and many health problems. That is why is important to get back to the basics of eating.

In my new book, Wholey Cow A Simple Guide To Eating And Living, I talk a little about  the Institute of Integrative Nutrition, (IIN) where I studied to become a certified health coach and learned over 100 different dietary theories. While they are all interesting and have value for different people, one theory in particular called the Weston A. Price dietary theory, focuses solely on the importance of getting back to the basics.

This dietary theory incorporates a traditional diet based on what our ancestors ate. The organization was founded by Weston Price, DDS, who was a nutrition research pioneer. “Dr. Price’s research demonstrates that humans achieve perfect physical form and perfect health generation after generation only when they consume nutrient-dense whole foods and the vital fat-soluble activators found exclusively in animal fats.”¹ The diet focuses on eating whole, unprocessed foods.

Some foods in the Weston A. Price Diet include the following:

  • Fresh fruits and vegetables
  • Meat from from pasture-fed animals including beef, lamb, game, and organ meats
  • Pastured Poultry and eggs
  • Wild fish and fish eggs
  • Full-fat milk products
  • Whole grains
  • Nuts and seeds
  • Cod liver oil
  • Traditional oils such as olive oil and sesame oil
  • Fermented fruits and vegetables
  • Home-made stock from bones of pastured animals
  • Traditional sweeteners such as honey, maple syrup, etc.

Some other recommendations of this diet include getting plenty of rest and exercise. Practicing forgiveness and having a positive mindset with consistent positive thoughts is also advised.

Red White And Blue Spiked Berries

With The Fourth of July just around the corner, I thought I would share a recipe for some Red White And Blue Spiked Berries I made the other weekend. Although this dessert is spiked with a little wine, it does include some healthy berries and slivered almonds, which contain protein, good fat and other healthful vitamins and antioxidants. Before I share the recipe however, I thought would share a little story.

I know I just wrote a blog on 5 Simple Ideas To Plan Meals, but I wanted to share an experience I recently had with meal planning. The other weekend, I had my sister and a friend up to the lake. As I was thinking about what we should have for our meals, I thought it might be fun to try some new recipes from a cookbook that my daughter gave me the other year. Although I like to try new recipes from time to time, when I cook I typically wing it and make meals with the food I have on hand, or change recipes up a bit to make them healthier. I thought this particular weekend however, it would be good to practice a little meal planning of my own. Anyway—we picked out 4 recipes from my cookbook, Williams-Sonoma Healthy in a Hurry, to make including the Wine Spiked Berries With Ricotta. We then made a grocery list of the things we needed to buy that I didn’t have on hand and made our way to the store for the rest of the ingredients.

The one day we made 3 recipes from the book and for breakfast the next morning we used the Turkey Arugula Frittata recipe, but we decided to change it up a bit and create a Healthy Breakfast Spinach Tomato Sausage Frittata version instead. It turned out to be delicious. Maybe you saw my blog on that one?

Anyway—I have to say the weekend, the meal planning and the food, all turned out great. We all helped out with the food prep and had a good time doing it. Oh— and the Wine Spiked Berries, which we added strawberries and almonds to were delightful. Here is the recipe for my version.

Red White And Blue Spiked Berries

  • 1 large orange
  • 1-1/2 cups dry red wine
  • 1/2 cup plus sugar, plus 2 Tbs. sugar
  • 2 cups mixed strawberries, blueberries and blackberries (You can also use raspberries or another type of berry.)
  • 1 cup ricotta cheese
  • 1 Tbs. Grand Marnier liqueur
  • 1/4 tsp. vanilla extract
  • 1/8 cup slivered almonds

Using a sharp paring knife, cut two 2- to 3-inch strips of zest from the orange. Using  a grater, remove 1 tsp. finely grated zest from another section of the orange. Reserve the orange for another use.

In a small saucepan, combine the wine, the 1/2 cup sugar and the orange zest strips and cook over medium-high heat, stirring constantly, until the sugar dissolves, about 3 minutes. Bring the mixture to a boil, then reduce the heat to medium and simmer until the liquid is reduced to about one-third, (simmer about 10 to 15 minutes). Remove from the heat and let the syrup cool.

Put the berries in a bowl. Remove the zest strips from the syrup and pour over the berries.

In a food processor or mixer, combine the ricotta, Grand Marnier, vanilla, grated orange zest and the 2 Tbs. sugar and mix until smooth. Spoon the berries with some syrup into glasses or small bowls and layer with the ricotta mixture. Top with slivered almonds and serve. Makes 4 servings.

5 Simple Ideas To Plan Meals

With the obesity epidemic on the rise, many people today are interested in eating healthier to help avoid health problems down the road. That is good news. The problem is that not everyone knows what is healthy or where to start. One simple thing you can do to start eating healthier is to plan meals and make more meals at home. I know some of you might think, this is easier said than done, but all it really takes is a little meal prep, organization and a positive attitude.

For me, planning meals has always been easy. I was raised in a family of six kids, so we were all expected to help out. I was in the kitchen at a young age and learned to cook, bake and plan ahead. I know this is not the case for everyone and some of you may find cooking challenging. In this blog, I thought I  would share 5 simple ways to help you plan more meals. Remember—cooking does not have to be hard or overly time-consuming. It can be fun, enjoyable and provide a delicious experience.

Let’s Take A Look at 5 Simple Ways To Help Plan Meals:

  1. Spend A Little Time Each Week Looking For Healthy Recipes—

    When it comes to cooking, a little pre-planning can go a long way and can make your life easier. You can start by making a list of some meals you would like to make. If you are not sure, pull out a cookbook, or a box of recipe cards and start paging through for some ideas. You can also browse recipe blogs and websites, or take a look on Pinterest. They have thousands of ideas and you can search by themes, specific ingredients, or categories and save your favorite ones to a Pin board to easily find them again. It doesn’t really matter where you look, the point is to find some recipes that appeal to you and get you inspired to cook. Look for recipes that contain healthy ingredients such as vegetables, fruit, meat, whole grains and good fats.

  2. Make Your Grocery List—

    After selecting your recipes, you will want to make a grocery list. Check your refrigerator and pantry to see which items you already have on hand. Write down the ingredients you need to purchase, or enter them in your phone App if you prefer to organize a list that way. There are many phone Apps available for lists. I use one called Out of Milk for my grocery list, which is easy to use and I like.

  3. Prep Food Ahead Of Time—

    Once you have the groceries you need, you can prepare some items in advance to make things easier for your self during the week, when things are hectic. You can get your family involved and if you have kids, make sure you involve them in the process too. You can have them help chop vegetables to have on hand and ready to go for salads, stir-fries, entrees, etc. It works best to store vegetables in glass containers, so you can easily see them and know what is what. If you want to save yourself more time, you can also pre-cook some meat such as sausage , or hamburger. This way you will have it ready and waiting to just heat up and combine with the seasonings and vegetables, etc. that you need for your specific recipe.

  4. Plan On Having Leftovers—

    Many people don’t like left overs, but when it comes to meal planning, having left overs is a good idea and actually saves you time. If you are already planning to make a dish with chicken, why not cook a few extra chicken breasts? That way you can have some on-hand for a salad the next day, or some chicken tacos, etc. If one of your meals includes rice, why not make some extra rice to have on hand and ready to go for another meal. You can easily heat the extra rice in a frying pan with olive oil and add in some vegetables, and herbs and spices such as Cajun, Tumeric, Basil, etc.  This can be done with other grains too. You can also incorporate left over quinoa, or another grain for breakfast. You can add fruit, nuts, almond milk and more. Be as creative as you like and don’t be afraid to try new ideas.

  5. Keep Your Pantry Well-Stocked—

    When you are pressed for time, it is important to have the items on hand that you need to make your meals. It can be very irritating when you find out you are out of a staple item, such as olive oil or coconut oil, and have to stop the cooking process to run to the store to continue cooking. To avoid this hassle, make sure you keep your pantry well-stocked with items that you use every day such as salt and pepper, other seasonings, flour, vinegar, etc. You may also want to keep eggs, lemons, herbs, and other fresh items you use regularly stocked in your refrigerator. Make sure you always check your staple items before going grocery shopping. Believe me, it will save you a lot of time and frustration.

Nutrition: Red Light, Green Light—An Easy Way To Code Food

When it comes to nutrition, many people today are confused, and rightly so. There are literally thousands and thousands of food products to choose from, each with their own packaging claims. While many processed foods are tasty, convenient and easy to prepare, not all of them are healthy and provide the nutrients that your body needs and craves. It is hard to know which ones are good for you. What consumers really need is an easy way to code food, so they can make better choices.

Recently I posted something on social media asking people to look back at their childhood to find an exercise they might like. As I was thinking about this and my own childhood, a simple game we used to play growing up, called “Red Light, Green Light” popped into my head. It was a fun running game, where one kid was the stop light and called out colors to make you stop or go. Anyway—the name of the game stuck with me and got me thinking this might be an easy way for people to decipher their food purchases. Like the colors of a stoplight, we can divide food into 3 simple color groups.

Red Light Foods—
Red light foods are those foods that are highly processed and contain a lot of additives and preservatives. If the ingredient list starts out with sugar, high fructose corn syrup, hydrogenated oil, etc., you should take a hard look at it and decide if the product is something you really want to buy. Typically red light foods such as potato chips, have a long list of ingredients, many of which are to hard to pronounce. Most people don’t have an idea of what these hard to pronounce ingredients really are, which is scary when you think about it. It is nice to know what you are ingesting, especially if it could have some negative affect. You should try and avoid red light foods when possible. If you do eat them, try eat them more on occasion, or sparingly.

Yellow Light Foods—
Yellow light foods are foods that are minimally processed. Think bagged vegetables, salads, nuts, seeds, raisins, etc. Some of these types of foods may have several ingredients, but don’t typically contain a long list of other additives or preservatives, so they are considered safe. You can feel comfortable buying these foods. You should shoot for foods with 5 ingredients or less, when possible. If they have a few more it is ok, just try and avoid foods that have a long list of ingredients.

Green Light Foods—
Green light foods are whole foods such as fruit, vegetables, whole grains, bulk nuts or seeds and meat. These foods come from the earth and provide our bodies with the nutrients it needs to function optimally. Think greens, berries, quinoa, cashews, pumpkin seeds and chicken. Our bodies need the nourishment these types of foods provide to function properly and optimally. You should try and base your diet around whole foods. Make sure to eat plenty of vegetables, protein and include good fats in your diet.

Healthy Mediterranean Chicken & Vegetable Salad

In this blog, I wanted to share a recipe for some healthy Mediterranean Chicken & Vegetable Salad that I made over the weekend. It is easy to make and includes some greens, nutrient dense vegetables and protein that your body needs and craves. It is also quite tasty. Give it a try if you like.

Recipe: Healthy Mediterranean Chicken And Vegetable Salad

  • 2 chicken breasts, cut in small pieces
  • Cajun seasoning
  • 1/2 package bagged spinach
  • 1 (15 ounce) can chickpeas, drained and rinsed
  • 1 tomato, diced
  • 1 small cucumber, diced
  • 1 small red pepper, diced
  • 1/2 small red onion, diced
  • 3/4 cup chopped black olives
  • 3/4 cup feta crumbles or Parmesan cheese
  • 2 tablespoons chopped fresh dill
  • Pita bread, wrap, or corn chips for serving

Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions:

Coat the bottom of a  frying pan with olive oil. Add the cut up chicken. Season with Cajun seasoning, or another favorite seasoning to taste. Saute the chicken breast in the oil, until browned and slightly crisp. Remove from heat and set aside.

In a medium sized bowl, combine all of the vegetable and dill. Mix together and then add in the chicken. In separate smaller bowl, combine the olive oil, red wine vinegar, Italian seasoning, salt and black pepper. Stir until well blended and then pour over the vegetable and chicken mix, stirring until the vegetables are coated.

Serve alone, or in a wrap, pita bread, or with Tostito chips. Top with the feta, or Parmesan cheese.

Curiosity Killed The Cat?

I don’t know about you, but I’ve always been a dog person rather than a cat person. It’s not that I think cats are bad, or hate them, it’s just they are different than dogs. Dogs get excited when they see you, like attention, enjoy being loved up and are known as “Man’s best friend.”

Cats on the other-hand can be fickle, temperamental and often like to keep to themselves. They also can be mischievous and can get into their fair-share of trouble. Reminds me of the saying, “Curiosity killed the cat!”

If you haven’t heard that one, it is an old proverb that reminds us of the dangers of unnecessary investigation or experimentation.¹ While it is often good in many situations to mind your business, truth be told…sometimes it is necessary to question things or try different ways of doing something. Maybe cats are on to something? After all—how can we make progress, or get ahead, if we don’t question how things are done or why certain circumstances exist? We need to be inquisitive sometimes. That’s how we got to the moon, can visit all kinds of places on an airplane, typewriters became a thing of the past and why there are fewer and fewer land-lines installed. Yes—indeed curiosity can be a good thing!

With the obesity epidemic on the rise and countless people who have health issues related to their diets and nutrition, it is time we all become a little more curious. We need to start to question why people are getting sick and why it is that more than half of the population is over weight. What is going on? That is a difficult question to answer, as it involves problems created on many levels involving the food supply and food system, from industrialization, big business and lobbyists for farmers and drug companies influencing our government. If you look back in time however, especially the last 50 years or so, it is easy to see how our food has changed and that is a big part of the problem. Society today eats more processed foods containing artificial ingredients and preservatives than real, wholesome foods. Many people don’t know the difference either and that is scary and sad.

Michael Pollan, in his book, Food Rules an eater’s manual, tells us, “Not to eat anything your great grandmother wouldn’t recognize as food.”² Now there’s something to contemplate and something for us all to consider. Wow! I can just imagine my great grandma walking into a grocery store today. Talk about curiosity! There are literally thousands and thousands of food products to choose from. Some of our great grandmothers would be more than curious. Some of these old ladies would probably freak-out and get their bloomers all in a bunch with all of the changes and selections!

But seriously…there is so much available today they probably would be dumb-founded by the sight of it all. Just imagine if they went to buy a few simple items and found all this strange stuff lurking in the many grocery store isles like, Kraft Singles, Gogurt, or something called Hot Pockets. I mean, think about it? Kraft Singles aren’t even cheese. It’s a man-made item, which is supposed to resemble and look like the real thing. “It’s actually a pasteurized prepared cheese product that is individually wrapped in plastic. It can’t even be referred to as cheese because of an FDA rule that states that it must be at least 51 percent real cheese.”³ Yikes! I thought cheese was a dairy product and you needed a cow, or a goat to produce it?

Yogurt in a tube is another strange and somewhat ridiculous thing. It not only is loaded with sugar, it’s available in some weird flavors and promotes putting some plastic packaging in your mouth. What happened to eating with a spoon anyway and who wants yogurt that tastes like bubble gum? That sounds disgusting, at least to me!

Oh and the Hot Pockets! Austin Powers may have made them popular, but Great Grandma would probably be thinking she is buying something to help her iron her clothes with a name like that, instead of some sort of processed bread product. They’re actually processed pizza bites that are loaded with corn syrup, imitation butter, cheese and a whole bunch of other stuff. What is L-Cysteine hydrochloride anyway? I don’t know either. Make sure you read the food label before buying this one item.

In my new book, Wholey Cow A simple Guide To Eating And Living, I talk a little bit about the importance of reading food labels and taking care of your health. We all need to pay more attention to them and notice more what we are eating. Make sure you look at the number of ingredients and notice what they are. If the list is long you may want to look for a similar item with fewer ingredients, as there is less of a chance of eating a bunch of preservatives or food additives.  If the list contains a lot of ingredients with hard to pronounce words, you’re probably better off not buying the product. You can look for something that has more natural ingredients, or opt for something else altogether, like an apple, banana, or some carrots.

Now there’s a thought! Let’s all try and get a little more back to the basics and be more like the cat when we choose our food because if we don’t, our lack of curiosity just might kill us.
